The heating is usually done on charcoals or open flame, but these days, many people have started using gas flames inside the tandoor for the tandoor to get properly heated. Once the heating is done, the food is baked by sticking it to the walls of the tandoor.

On the other hand, for any tandoori or tikka food item, firstly, pieces of chicken, lamb, mutton or paneer are skewed on the skewer and then are put inside the tandoor. When foods are prepared, their juice falls on the ashes and creates a smoky smell and gives the food a smoky taste.
